Sourdough Banana Bread
Extra moist banana bread with a subtle tang from the sourdough. A perfect way to use overripe bananas AND discard.
Ingredients
- 3 ripe bananas (mashed)
- 1/2 cup sourdough discard
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 egg
- 1 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- Optional: 1/2 cup walnuts or chocolate chips
Instructions

Preheat oven to 350°F. Grease a 9x5 loaf pan.

Mash bananas in a large bowl.

Mix in discard, melted butter, sugar, egg, and vanilla.

Add flour, baking soda, and salt. Mix until just combined.

Fold in walnuts or chocolate chips if using.

Pour into prepared pan.

Bake 55-65 minutes until toothpick comes out clean.

Cool in pan 10 minutes, then remove to wire rack.
Pro Tips
- The riper the bananas, the sweeter and more flavorful.
- Don't overmix — lumps are okay.
- Freezes beautifully for up to 3 months.
