Sourdough Flatbread
Quick, no-knead flatbread cooked in a hot skillet. Perfect with hummus, soup, or as a pizza base.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup sourdough starter or discard
- Water as needed (start with 2 tbsp)
- 1/2 tsp salt
- 1 tbsp olive oil
- Optional: garlic, herbs, za'atar
Instructions

Mix flour, starter/discard, salt, and olive oil.

Add water a tablespoon at a time until dough comes together.

Knead briefly until smooth, rest 1-2 hours covered.

Divide into 4-6 pieces, roll each very thin.

Heat a dry skillet over high heat.

Cook flatbread 2-3 minutes per side until charred spots appear.

Brush with olive oil and sprinkle with salt or herbs.

Pro Tips
- Higher heat = better char and puff.
- Active starter will give more rise, discard is more tangy.
- Great for wraps, dipping, or mini pizzas.
