Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup sourdough starter or discard
  • Water as needed (start with 2 tbsp)
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • Optional: garlic, herbs, za'atar

Instructions

  1. 1

Mix flour, starter/discard, salt, and olive oil.

  2. 2

Add water a tablespoon at a time until dough comes together.

  3. 3

Knead briefly until smooth, rest 1-2 hours covered.

  4. 4

Divide into 4-6 pieces, roll each very thin.

  5. 5

Heat a dry skillet over high heat.

  6. 6

Cook flatbread 2-3 minutes per side until charred spots appear.

  7. 7

Brush with olive oil and sprinkle with salt or herbs.

  8. 8

    Serve warm.

Pro Tips

  • Higher heat = better char and puff.
  • Active starter will give more rise, discard is more tangy.
  • Great for wraps, dipping, or mini pizzas.
