Brown butter, very ripe bananas, tang from the discard.

Ingredients
- 3 very ripe bananas, mashed
- 100g sourdough discard
- 120g brown butter, cooled
- 150g brown sugar
- 2 eggs
- 1 tsp vanilla
- 200g flour
- 1 tsp baking soda
- 1 tsp salt
Steps

Whisk wet ingredients. Fold in dry. Don't overmix.

Pour into oiled 9x5 loaf pan.

Bake at 350°F for 55-65 min, until skewer is clean.

Cool 20 min in pan, then slide out and finish cooling.
