Mix and knead
Combine all ingredients. Knead until smooth, 6–8 minutes.

Bulk ferment
4 hours in a warm spot, two stretch-and-folds in the first 90 min.

Shape and pan
Shape into a tight log, transfer to an oiled loaf pan.

Bake
Final proof 90 min. Bake 425°F for 35 min. Tap the bottom — should sound hollow.
